Creamy peasant soup

  • carrots 40 g
  • red and yellow peppers 100 g
  • fine green beans 80 g
  • chopped onion 60 g
  • extra virgin olive oil 2 tbsps
  • pork loin 280 g
  • tomato paste 1 tsp
  • hot water 1.2 l

  • lemon juice 1 tbsp
  • tarragon ½ tsp
  • egg 1
  • chopped parsley 1 tbsp
  • Fresh chilli to taste

  1. Clean the vegetables and cut into small cubes (the ideal is that they are about ½ cm). Fry the onion in oil, add the meat cut into pieces and the tomato paste. Add hot water and let it simmer for 20 minutes. Now add the vegetables and cook for another 15 minutes.
  2. For the sour cream, blend Gran Cucina with the lemon juice and tarragon and add it to the preparation, keeping a little aside for decorating the dishes.
  3. At the end of the preparation, lightly beat the egg and also mix the latter with the soup to further bind it.
  4. Pour the soup obtained into plates and finish with drops of sour cream, chopped parsley and pieces of fresh chilli.
