  1. For the blueberry cream: bring the blueberry pulp with the eggs and sugar to the boil, cool slightly and add the gelatin powder, add the butter and blend with a hand blender. Pour the blueberry cream into the glasses and let it solidify in the refrigerator.
  2. For the raspberry compote: blend the raspberries, mix the sugar with the pectin and add to the fruit pulp, add the lemon juice and bring to a boil in a pan for 2-3 minutes, cool and use by pouring into the glasses over the cream with blueberries.
  3. Decorate with Spray Pan Zero and complete with fresh berries and fresh mint leaves.
